    Just wondering if there is an alternative for the corn syrup for the people trying to stay away from high carb and high gluten things..thankyou so much for this recipe, one of my altime favourite flavours. My mum used to use the ruf brand almond essence in her baked goods.

      Les proportions de Biga impliquent généralement un rapport de 100 % de farine pour 50 à 60 % d'eau et 0,8 à 1,5 % de levure fraîche. La quantité de levure utilisée dépend de la durée de fermentation du biga. Un taux de levure de 1 % à température ambiante rendra le biga prêt en 14 à 18 heures.

      For jam to be jam the sugar content has to be 550g sugar per kg of jam minimum (55%) including the sugar content of the fruit. Anything under that is not jam. In this case he added 400g of sugar to 2 lemons plus the glucose which is well over 55%. So I guess it can be called jam even though the end product resembles chunky confit of lemon in a rather liquidy sugary medium. I would have cooked it a bit longer to make it thicker, more jammy. Maybe it was still hot ? Jam tends to set and thicken as it cools down.

      You can use a couple of different types of flour for cheesecake, but the most common type is all-purpose flour. All-purpose flour contains a medium amount of gluten, which helps to bind the cheesecake together but doesn't make it tough. Some recipes may call for a small amount of cake flour . Cake flour has a lower gluten content than all-purpose flour, which can result in a more tender and crumbly cheesecake.
